This is Shipt headquarters calling with text messages about any order you placed where Shipt picks up the item(s) from a store and delivers it to your door.

They're "calling with text messages"?! That makes no sense.
By the way, do you often look up known phone numbers when there's no logical reason to do so?

i keep getting text messages from a Lori at shipt HQ. on target order being sent to her door.

No it is not. It is a SCAM.

Text’d saying they are Shipt at odd early morning hours saying my order is being prepared with a link and than hours later saying it was delivered and to refer to the picture by clicking on a link. It’s a scam.

Or, more likely, somebody ordered something through Shipt and entered their phone number wrong (or Shipt recorded it wrong) and ended with your number by mistake.  You are getting the notices meant for that person.
Shipt is a service where a person can order items and Shipt will send shoppers to the store(s) to obtain those items and deliver them to the person.
